Morningstar Farms® Chorizo Southwest Pie
Savor the bold flavors of the Southwest with this chorizo pie! A quick and delicious meal featuring zesty chorizo crumbles, sweet corn, black beans, and a colorful pepper and onion mix, all topped with cheddar cheese and a golden corn muffin crust.
Ingredients
- 1 bag Morningstar Farms® Chorizo Crumbles™
- 1 cup Can Corn (drained)
- 1 cup can Black Beans (drained)
- 1 cup Pepper & Onion Mix (frozen, fajita mix)
- 1 tsp minced Garlic
- 1/4 tsp Ground Cumin
- 1 Tbsp Cilantro, chopped
- 1 1/2 cup red Enchilada Sauce
- 1 1/2 cup Shredded Cheddar (cheese)
- 1 package Corn Muffin Mix (8.5oz)- prepared according to box instructions (may require egg, milk, butter)
- 2 Tbsp unsalted Butter
Directions
1. In a bowl, combine Morningstar Farms® Chorizo Crumbles™, corn, black beans, onion and pepper mix, garlic, cilantro, and cumin. Heat a non-stick pan with 1 tablespoon of vegetable oil on medium. Cook the mixture for 5 minutes, stirring in the enchilada sauce. Set aside.
2. Preheat the oven according to the corn muffin mix instructions. Spray a 13x9 pan. Layer the chorizo mix and shredded cheddar cheese, followed by the corn muffin mix. Spread evenly and bake.
3. Once baked, spread 2 tablespoons of butter on top. Serve immediately. Enjoy!
