Island Black Bean Burger with Jerk Mayo and Pineapple

Ingredients
- 4 ea MorningStar Farms® Spicy Black Bean Burger
- 2 Tbsp Coconut oil
- 2/3 cup White onion, peeled and sliced into thin strips
- ½ cup Poblano peppers, stemmed, seeded and sliced into thin strips
- 2 Tsp Cilantro, stemmed and chopped roughly
- 4 ea Pineapple ring, sliced ¼” thick, center removed
- 4 slices Provolone cheese, sliced
- 2/3 cup Mayonnaise
- 2 ½ Tbsp Jerk seasoning paste
- 4 ea Brioche-style buns, split
Directions
1. In a medium mixing bowl, combine the mayonnaise and jerk seasoning and mix to combine. Set aside
2. Preheat the oven to 350°F
3. In a skillet over medium heat, use the coconut oil to sauté the onions and peppers until soft and caramelized. Stir in the chopped cilantro and set aside in a small dish
4. Arrange the black bean patties on a lightly greased baking sheet in a single layer. Bake in the 350°F oven for 14 minutes, the patties should be hot in the center and toasted. Remove from the oven to a warm place
5. Top each black bean patty with one slice of pineapple and one slice of provolone cheese. Place back in the oven to bake another 4 minutes to heat up the pineapple and melt the cheese
6. When the patties are cooked and hot, remove from the oven
7. Place the bottom buns on a plate and spoon 1 Tbsp of the jerk mayo on top, spreading out across the bun
8. Place the patty with pineapple on top and spoon ¼ of the pepper and onion mix on top of each burger
9. Spread 1 Tbsp of the jerk mayo on the top bun and top the burger
