MorningStar Farms® Vegan Stuffed Bell Peppers

Ingredients
- 1 Value pack (32oz) Morningstar Farms® Grillers® Crumbles
- 2 Tbsp Vegetable Oil
- 3 Bell peppers, (Green or Red, cut in half)
- 1/2 cup chopped yellow onion
- 1 tsp minced Garlic
- 1/2 cup cooked Jasmine Rice
- 14.5 oz can diced Tomatoes (drained)
- 1 1/2 cup Vegetable Broth
- 1 Tbsp Tomato Paste
- 2 tsp Italian Seasoning
- 1/2 tsp Ground Black Pepper
- 4 Tbsp Feta Cheese (optional)
Directions
1. In a large nonstick skillet, cook onion and garlic in vegetable oil on low to medium heat until tender. Add Grillers® Crumbles, diced tomatoes, 1 cup vegetable broth, tomato paste, Italian seasoning, and black pepper. Simmer on low for 8-10 minutes until tomatoes soften.
2. While simmering, remove the stems and seeds from the peppers, place them in a 13x9 baking dish, and preheat the oven to 380°F. Remove the crumble mixture from the heat, stir in the rice, and fill each pepper half with 1 heaping cup of the mixture.
3. Add the remaining 1/2 cup vegetable broth to the baking dish. Cover with foil and bake for 30 minutes until the peppers are tender. Remove the foil, add cheese (optional), and bake for 3 more minutes. Serve and enjoy!
