This hearty Vegetable Cassoulet is a symphony of MorningStar Farms® favorites, combined with robust Italian-style stewed tomatoes and aromatic herbs, simmered to perfection. A medley of vegetarian sausage, veggie bacon and vegan chik’n strips are sautéed with garlic, celery, and a colorful fajita mix, then married with beans and vegetable broth for a comforting, flavorful dish. This cassoulet is a delightful vegetarian twist on a classic French stew.

Ingredients

  • 10 MorningStar Farms® Sausage Links, cut into bite-size pieces
  • 1 cup Diced MorningStar Farms® Chik'n Strips
  • 4 Morningstar Farms® Bacon Strips, diced
  • 2 teaspoon vegetable oil
  • 2 teaspoon minced garlic
  • 1/4 cup diced celery
  • 2 cups frozen fajita pepper & onion mix
  • 15 1/2 ounce canned great northern beans, rinsed and drained
  • 14 1/2 ounce canned Italian-style stewed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1/4 cup fresh chopped parsley
  • 1/4 teaspoon ground black pepper

Directions

1. Thaw and cut the MorningStar Farms® sausage links and chik’n strips into bite-size pieces. Cook the bacon strips according to the package directions, then cut them into bits and set aside.

2. In a large skillet, cook minced garlic and celery in oil for 3 minutes. Add the fajita mix and cook until tender. Add the prepared sausage and chik’n, cooking for an additional 7 minutes. Then, add tomatoes, beans, vegetable broth, thyme, and black pepper, and cook on low for 10 minutes. Lastly, stir in parsley and bacon bits. Serve immediately and enjoy!
