Sweet BBQ Riblet Patty Melt

Ingredients
- 1 pack MorningStar Farms® Sweet BBQ Riblets
- 2 cups white onions, halved and sliced thinly
- Pinch salt and pepper (to taste)
- 4 slices sourdough bread, sliced 1/3” thick
- 2 tablespoons olive oil, light
- 4 slices Colby jack or cheddar cheese (use dairy-free to make it vegan, make sure it’s meltable)
Directions
1. Heat up the MorningStar Farms® Sweet BBQ Riblets according to the packaging. Keep in a warm place.
2. While the riblets heat up, cook the sliced onions in olive oil in a small heavy bottom pan until well caramelized and brown. Season them about halfway through with salt and pepper. Estimated cook time is about 15-18 minutes. Set aside and keep warm.
3. Brush olive oil on one side of each slice of bread. Flip the bread over and top with cheese slice.
4. Place the warm riblet on top of the cheese and 2 large spoons of the caramelized onions.
5. Top with the other slice of cheese and place the other bread on top, olive oil side facing outwards.
6. Griddle or cook on a panini press until the bread is toasted on both sides and the cheese melted.
7. Serve hot and enjoy!
