Ingredients

  • 10 oz (1 tray) Morningstar Farms® Korean BBQ Riblet
  • 2 cups chopped Bok Choy
  • 2 Eggs (soft boiled, 7 minutes)
  • 32 oz Vegetable Broth
  • 1/4 cup Dried Shiitake mushrooms
  • 8 oz cooked Ramen Noodles
  • 3 Tbsp low-sodium Soy Sauce
  • 2 Tbsp sweet Rice Vinegar
  • 1 tsp minced Garlic
  • 1 1/2 tsp Ground Ginger
  • 1 Tbsp Sesame Oil
  • 2 Tbsp finely chopped Green Onion

Directions

1. Follow the package directions for the Morningstar Farms® Korean BBQ Riblet as per oven instructions.

2. In a pot, simmer vegetable broth, 1 tbsp soy sauce, and shiitake mushrooms for 10 minutes. Remove mushrooms and keep the broth warm.

3. In a skillet, heat sesame oil, garlic, and ginger powder for 3 minutes. Add mushrooms and Bok choy, sauté for 5 minutes. Add 2 tablespoons of soy sauce and rice wine vinegar.

4. In a bowl, add cooked ramen noodles, warm broth, sautéed veggies, a soft-boiled egg, and the riblet. Garnish with green onion. Enjoy!
