Stuffed Peppers

INGREDIENTS

4 bell peppers
2/3 cup fresh parsley
1/4 cup Parmesan cheese
2 tbsp walnuts, chopped
1 1/2 tsp dried basil
1 tsp salt
1 clove of garlic
1/4 cup olive oil
1 cup prepared orzo pasta
1 pkg Morningstar Farms® Meal Starters Grillers® Recipe Crumbles™
1 (12-ounce) can tomato sauce

DIRECTIONS

Preheat oven to 350 degrees. Bring large pot of water to boil. Cut tops off peppers and scrape out insides. Reserve tops. Simmer peppers in water for 3 minutes. Remove from water and drain. Add parsley, Parmesan cheese, walnuts, basil, salt and garlic in food processor. Pulse. Add 1/4 cup olive oil and process until it forms a smooth pesto. In a large bowl, mix pesto, pasta, and Recipe Crumbles until thoroughly combined. Fill each pepper with pasta mixture. Place peppers upright in 9x9 baking dish. Put tops back on peppers. Fill pan with tomato sauce around peppers. Bake for about 20 minutes or until internal temperature reaches 160 degrees.
