Hearty Breakfast Casserole Recipe
Active weekend days call for a nutritious, breakfast hearty enough to keep you going. This baked egg casserole filled with veggie sausage links, cheddar cheese and potatoes fits the bill.
This recipe has been tested and endorsed by Kellogg and MorningStar Farms®.
|1 bag (28 oz.) frozen O'Brien-style potatoes|
|1 tablespoon vegetable oil|
|1 1/2 cups refrigerated egg substitute*|
|2 cups shredded fat-free Cheddar cheese|
|1 cup fat-free milk|
|2 tablespoons all-purpose flour|
|1/4 teaspoon salt|
|1/4 teaspoon pepper|
|1 package MorningStar Farms® Sausage Links|
1. In 12-inch nonstick skillet cook potatoes in oil over medium heat about 20 minutes or until golden brown, stirring occasionally. Set aside.
2. In large bowl combine egg substitute, cheese, milk, flour, salt and pepper. Stir in MORNINGSTAR FARMS™ Veggie Breakfast Sausage Links and cooked potatoes.
3. Pour mixture into 13 x 9 x 2-inch baking dish coated with cooking spray.
4. Bake at 350° F for 40 to 45 minutes or until set.
*If desired, substitute 6 beaten eggs for the egg substitute.
