Description
The essence of comfort food--mashed-potato-topped, veggie-loaded pot pie! For a completely vegetarian version, omit the Romano cheese.
INGREDIENTS
| 6 servings instant mashed potatoes |
| 1/2 cup shredded Romano pecorino cheese |
| 1 1/2 cups vegetable broth |
| 1 1/2 cups chopped carrots |
| 1 1/2 cups chopped onions |
| 1 1/2 cups sliced mushrooms |
| 1 1/2 cups sliced celery |
| 1 1/2 cups frozen corn |
| 1 teaspoon black pepper |
| 2 bay leaves |
| 2 whole cloves |
| 1 package (12 oz.) MorningStar Farms® Meal Starters® Grillers® Recipe Crumbles™ |
| 2 tablespoons all-purpose flour |
DIRECTIONS
1. Follow the recipe per package directions for mashed potatoes, decreasing the margarine by half. Stir in cheese. Set aside.
2. In large saucepan, combine broth, carrots, onions, mushrooms, celery, corn, pepper, bay leaves and cloves. Cover and cook until vegetables are tender. Add MORNINGSTAR FARMS MEAL STARTERS GRILLERS RECIPE CRUMBLES. Mix well. Remove 1/2 cup of broth and mix with flour and slowly add back to the vegetable/crumble mixture. Simmer until thickened. Remove bay leaves.
3. Transfer the vegetable/crumble mixture to 3-quart casserole dish which has been coated with cooking spray. Combine mashed potatoes and cheese and top mixture. Bake at 375°F for 20-25 minutes or until the potatoes begin to turn a golden brown.

To Caroline, white flour has more gluten which works as a thickener. Whole wheat won't have the same effect. There are alternatives, but it's not worth it really.

I made this for my parents who need to eat healthier, but resist change and cutting out meat would normally be the last thing they would do. I made 1/3 of the portion with Sweet Baby Ray's as Kate suggested and the rest just as the recipe calls. They LOVED it! I am so pleased. It was really very easy and the very little leftovers will be delicious for lunch. I can't believe my meat and potatoes father went on and on about how great it was (he liked the BBQ version). I also made fresh mashed potatoes. Yummmm.

I'm really a newbie when it comes to cooking, but I was wondering if whole wheat flour could be used instead of white? I know it's such a small amount but I try to avoid white flour as much as possible. Any feedback would be appreciated! Thanks :)

I've been making a meatless shepherd's pie with morningstar's crumblers for years! I also use mixed veggies, and for seasoning I use Sweet Baby Ray's BBQ sauce and freshly ground black pepper on the crumblers. Layering shredded co-jack cheese underneath AND on top of the mashed potatoes makes it yummy to the max!

This came out delicious and was very easy to make. I used a mixed frozen bag of carrots,beans, corn and peas and frozen broccoli too. Also I didn't have bay leaves or whole cloves so I used ground up cloves. I also put french's fried onions on top. Delish!
