Description
These classically sauced sweet-and-sour meatballs make great party appetizers. However, if you prefer them for a main dish, serve the meatballs over hot cooked brown rice.
INGREDIENTS
| 2 packages (8.5 oz. each) Morningstar Farms® Meal Starter® Veggie Meatballs |
| 1/2 cup firmly packed brown sugar |
| 4 teaspoons cornstarch |
| 1/3 cup vegetable broth |
| 1/3 cup red wine vinegar |
| 2 tablespoons reduced-sodium soy sauce |
| 1 tablespoon light-colored corn syrup |
| 2 teaspoons grated gingerroot |
| 1 large red bell pepper, cut into 1-inch pieces |
| 3 green onions, cut into 1-inch pieces |
DIRECTIONS
1. Prepare MORNINGSTAR FARMS MEAL STARTER Veggie Meatballs according to package directions.
2. In medium saucepan stir together brown sugar and cornstarch. Stir in broth, vinegar, soy sauce, corn syrup and gingerroot. Cook and stir over medium-high heat until boiling and thickened. Stir in bell pepper.
3. In chafing dish or 2 1/2-quart crockery cooker place meatballs. Spoon sauce over top, gently stirring to mix. Sprinkle with green onions. Keep warm over low heat for up to 2 hours. Serve with cocktail picks.
