Description
An easy vegetarian version of classic tortilla soup.
INGREDIENTS
| 1 tablespoon olive oil |
| 1 cup chopped onions |
| 1 1/2 teaspoons (3 cloves) chopped garlic |
| 1 package MorningStar Farms® Meal Starters® Chik'n Strips |
| 2 cans (11 oz. each) mexi-corn (corn with green and red bell peppers) |
| 2 cans (14 1/2 oz. each) chopped tomatoes with green pepper and onion |
| 1 cup chopped green bell pepper |
| 3 cups vegetable broth |
| 1 teaspoon cumin |
| 1/2 to 1 chipotle chili, chopped |
| 1/4 cup fresh cilantro, chopped |
| 1/2 cup crushed tortilla chips (optional) |
DIRECTIONS
1. Heat oil in large skillet over medium-high heat. Add onion and garlic. Sauté until onion is translucent, about 2 minutes.
2. Transfer onion and garlic to stock pot, adding MORNINGSTAR FARMS MEAL STARTERS CHIK'N STRIPS, mexi-corn, both cans of tomatoes, green pepper, vegetable broth, cumin and chipotle chili.
3. Heat soup over high heat until it reaches a boil. Reduce heat to simmer. Simmer 10 minutes.
4. Stir in fresh cilantro. Ladle into soup bowls. Garnish with crushed tortilla chips, if desired.
