Description

For a new twist on an old favorite, we combined all the layers and flavors of family-pleasing lasagna in one easy-to-prepare skillet meal.

INGREDIENTS

1 package (9 oz.) MorningStar Farms® Veggie Italian Style Sausage 
1 1/2 cups water
1/2 cup chopped onion
1 jar (24 oz.) marinara pasta sauce
2 cups uncooked dried bowtie pasta
1 medium zucchini, halved lengthwise and cut into 1/2-inch-thick slices
1 large carrot, cut into 1/4-inch-thick slices
2/3 cup reduced-fat cottage cheese
1/4 cup finely shredded or grated Parmesan cheese
1/4 teaspoon coarsely ground black pepper
1/2 cup shredded mozzarella cheese

DIRECTIONS

1. Remove MORNINGSTAR FARMS VEGGIE ITALIAN STYLE SAUSAGE links from package. Place on microwave-safe plate. Loosely cover and cook on MEDIUM-HIGH (70% power) for 1 1/2 to 2 minutes or until partially thawed, rearranging links and turning over after 1 minute. Cut into 1/2-inch-thick slices. Set aside.

2. In large nonstick skillet combine water and onion. Bring to boiling. Reduce heat. Simmer, covered, for 4 minutes. Stir in marinara sauce. Return to boiling. Stir in pasta. Return to boiling. Reduce heat. Simmer, covered, for 14 minutes, stirring once after 10 minutes.

3. Stir in sausage slices, zucchini and carrot. Return to boiling. Reduce heat. Continue cooking, covered, for 5 to 6 minutes or until vegetables are crisp-tender. If necessary, simmer, uncovered, for 1 to 2 minutes more or until mixture is of desired consistency. Remove from heat.

4. Meanwhile, in small bowl stir together cottage cheese, Parmesan cheese and pepper. Drop by rounded tablespoonfuls into hot mixture. Do not stir. Sprinkle mozzarella cheese over top. Let stand, covered, about 5 minutes or until cheese melts

Where is this recipe?! Can someone please tell me where this recipe is and why I am having such a hard time with this website tonight? Morningstar/Kellogg are you upgrading it?! I hope so cause it is extremly slow! I am also very disappointed that I have bought all of the ingredents for this recipe but now it looks like I can't even use them because the recipe is gone?!?! Two thumbs down Morningstar!!!!!!!!!

I made this last night and it was tasty! The only thing I would change is to add less pasta and more zucchini/carrots. You can also subsitute traditional pasta sauce for the marinara and it's gooood!
