Description
These cheese, green pepper and pizza-sauce-topped veggie meatballs served in crusty rolls make great sandwiches for game-time gatherings.
INGREDIENTS
| 1 package (8.5 oz.) Morningstar Farms® Meal Starter® Veggie Meatballs |
| 1/2 small onion, cut into very thin wedges |
| 2 tablespoons water |
| 3/4 cup pizza sauce |
| 4 (6-inch) hoagie buns or sub buns, split |
| 1/4 medium green bell pepper, cut into thin strips |
| 1/2 cup shredded provolone cheese (2 oz.) |
DIRECTIONS
1. Prepare MORNINGSTAR FARMS MEAL STARTER Veggie Meatballs according to package directions.
2. In small saucepan combine onion and water. Cover and cook over medium heat for 2 minutes or until onion is crisp-tender. Drain. Return onion to saucepan. Stir in pizza sauce. Cook, uncovered, over medium heat for 2 to 3 minutes or until heated through, stirring occasionally.
3. Scoop out some of the soft bread inside the bottom of each bun, leaving about 1/4- to 1/2-inch of bread on bottom. Place meatballs in rolls. Spoon sauce over meatballs. Top with bell pepper and cheese (if desired). Place sandwiches, open sides up, in 12 x 8 x 2-inch baking dish. Bake, uncovered, at 400°F for 10 to 15 minutes or until rolls are crusty and cheese melts.
